Just when you think the machine that churns out sweet, silky ice cream is already amazing as is, someone has created a machine that turns your favorite alcoholic drink into soft serve.

This “ice cream” machine that turns alcoholic drinks into soft serve is called the Below Zero machine. The machine is FDA-approved and pasteurized.
The man who made it possible to eat your favorite alcoholic drink is Will Rogers, who worked with WDS Dessert Stations in Hinkley, Illinois to develop the machine.
Those who love alcohol need not worry that their drink will lose its potency once it’s turned into soft serve by the Below Zero machine. Since alcoholic beverages contain no dairy, what comes out of the machine technically isn’t ice cream.
According to Good News Network, the alcoholic soft serve will retain its potency.

How the Below Zero Machine Works

So how does the Below Zero machine turn alcoholic drinks into soft serve treats? The Below Zero machine crystallizes the alcoholic beverage in half an hour into a cold treat resembling ice cream .
Specifically, carbon dioxide is first taken out of the chosen drink before Nitrogen Ingredient Additive gel is added in. The whole mixture is then poured into the Below Zero ice cream machine, which turns it into soft serve.
“The way it truly works… we like to say the gel ‘bear hugs’ the alcohol itself and turns it into ice cream,” Rogers said in an interview with Good News Network.
Traditional ice cream is made almost similarly. First, milk, cream, and other ingredients and even toppings are mixed together to create the ice cream base. The mixture is then pasteurized before it goes through a process called homogenization. According to Medium, homogenization is the process “in which the fat droplets in the base are broken up and dispersed.”
The mixture is then cooled and allowed to age and mature for a better texture and flavor. After which, the mixture is then churned in a machine that turns it into ice cream.
Out of the Ordinary Ice Cream Innovations
Alcoholic soft serve churned by the Below Zero machine joins the list of modern, creative ice cream and similar cold treats that people have come up with through the years.
Black charcoal ice cream became a summer trend a few years back while an ice cream that changes color as it is licked has also been developed. The latter, called Xamaleon, was developed by Spanish physicist Manuel Linares.
Even popular commercial ice cream brands have tried to innovate the cold sweet treat. Ben & Jerry’s announced in 2019 that the company wanted to produce a CBD-infused flavor. CBD is otherwise known as cannabidiol, a chemical compound found in the cannabis plant.
As far as machine innovations like the Below Zero machine that can create a different kind of ice cream go, ColdSnap debuted an ice cream smoothie machine earlier this year that uses pods like those of Nespresso to create the cold dessert treat.
